This is a very rich sake, full blown aromas and flavour.
The nose hits you with umami at first, then aromas of nougat and almond comes through as it opens up, followed by white chocolate. The nose isn't overly sweet or cloying, rather pleasant to smell.
The palate mimics the nose, with ample of richness, after you get pass the almond nougat notes, you will find a nice touch of rice, lemon, and umami, almost creates a nice dessert on its own, with a touch of acidity dancing in the background.
The finish is medium length, with a nice touch of minerals in addition to the umami and rice flaovur.
This namazake revolves around sweet notes, without being too sweet or cloying on the palate. I would hope for more acidity to give it a nicer balance. Rather pleasant to have a glass, will save the rest over the week or two to see it change.
